Welcome to the ice-cream renaissance

I am delighted to have been featured in The Observer Magazine – ice cream’s gone haute!

“Independent makers and innovative flavours are transforming the frozen dessert scene, opening up a whole new world of flavour.”

Richard Fennell, owner of small-batch producer Fennell’s in Sheffield, has noticed “people are more educated about flavour,” leading artisan makers to move away from overly sweet tastes “like cookie dough”, towards more natural, seasonal ingredients, fresh fruit and infusions. He looks to pastry chefs and cocktails for inspiration, creating flavours such as sea-salt plum ripple and brunost (a sweet Norwegian cheese) with salted caramel.

A new era of ice-cream is upon us, as independent makers, innovative styles and flavours surge onto the scene. Basic chocolate and strawberry are out, almost anything else is in.”
